
Slow Cooker Vegetarian Curry

Ingredients
- 15 ounces garbanzo beans, drained & rinsed
- ½ cup light coconut milk
- 2 medium sweet potatoes, peeled & diced
- 1 medium onion, diced
- 2 garlic cloves, minced
- ½ tsp ghee (omit for vegan)
- 1 tbsp curry powder
- 1½ tsp ginger
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp red pepper flakes
- ½ pint cherry tomatoes, sliced
- ½ cup frozen peas
Instructions
- Add all ingredients EXCEPT peas & tomatoes to the slow cooker.
- Stir to mix well.
- Cook HIGH 1-2 hours or LOW 3-4 hours.
- When there are 30 minutes of cook time left, add in peas and tomatoes. Stir to mix well. Recover and finish cooking.
