Ingredients
  • 15 ounces garbanzo beans, drained & rinsed
  • ½ cup light coconut milk
  • 2 medium sweet potatoes, peeled & diced
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • ½ tsp ghee (omit for vegan)
  • 1 tbsp curry powder
  • 1½ tsp ginger
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp red pepper flakes
  • ½ pint cherry tomatoes, sliced
  • ½ cup frozen peas
 
Instructions
  1. Add all ingredients EXCEPT peas & tomatoes to the slow cooker.
  2. Stir to mix well.
  3. Cook HIGH 1-2 hours or LOW 3-4 hours.
  4. When there are 30 minutes of cook time left, add in peas and tomatoes. Stir to mix well. Recover and finish cooking.
