INGREDIENTS
3 Tbsp oil
1 large onion, chopped
1 medium cauliflower, cut into 1” chunks
½ tsp turmeric
¾ tsp salt
1 red chili pepper, diced (optional)
3 Tbsp tomato paste
1 cup water
DIRECTIONS
- Add oil and onion to medium pot on high heat and stir until onion has browned.
- Add remaining ingredients, cover, bring to a boil, reduce heat to medium, stirring every 5 minutes until water has evaporated and/or been absorbed. The dish is ready when the cauliflower is soft, no longer crunchy, but not disintegrating.
